Dogliani

Recognizing its high quality and its distinguished characteristics in 2005 the Dolcetto di Dogliani Superiore became a DOCG wine, taking the name “Dogliani”. The new rules require higher quality for this wine. The area of production is the same of Dolcetto di Dogliani, but only the best positions can become Dogliani vinyards.
Dogliani has started its own life and can't be considered anymore Superior Dolcetto. The wine that come from “Dogliani” registered vinyards and can't be named “Dolcetto of Dogliani”.

DOCG Denominazione di origine controllata e garantita of the wine "Dogliani"
The controlled origin title, "Dogliani" (also ammitted but not used Dolcetto di Dogliani Superiore), is exclusive to the red wine which fulfils the requirements set forth herein.
Grape: the wine " Dogliani" must be made from grapes grown in vineyards where only the vine "Dolcetto" is grown.
Max production per hectare 7000 kg. (6300 kg if wine is “Vigna” cru)

When put on sale and consumed the "Dogliani" wine must correspond to the following characteristics:
Colour: ruby red;
Bouquet: fruity, pleasantly distinctive;
Flavour: little almond taste, harmonious;
Min. alcoholic strength: 13 % vol.;
Min. acidity level: 4,5 g/l;
Min. net dry extract: 24 g/l.
Min. aging period by law: the wine "Dogliani" can be bottled starting from the middle of October of the hear following the one of vintage. The Wine can be putted non the market starting from 1st of November.

Technical data

Making the Dogliani we have the greatest careful to promote the extraction. We don't believe in a quick and strong extraction, as the ones done by rotary vessel or other mechanical action done on the grapes, and we prefer extend the maceration as long as we can. In the same way we don't use enzymes to increase the extraction. We do only pumping over.

Tasting note

We believe the grand wines are characterized by a quality that we like call “personality”. Non necessarily a great wine must be absolutely perfect, but surely a great wine does not go unnoticed when tasted in the midst of other. The elegance, the body, are essential qualities for a wine that aims to be important, but these qualities alone can not make a wine a memory that lasts. So as some persons that we meet during our life are stuck strongly in our mind, a grand wine must stay a long in our memory. The people that have impressed us have some qualities that we appreciated them, but hardly any of them had no personality. This extraordinary quality, that wines and people have in common, can be ever different and anyway ever itself.

Color : Deep red with violet-purple reverberation
Aromas : Cherry and red fruits, leather, tobacco and musk
Palate : Full body, rich and ample, long finish, nice concentration.
Food match : Game, fatty dishes, aged cheese most of traditional Piedmont's dishes.
